This morning we woke up with Mickey on our mind, and how we are counting down the days to our next Disney vacation. May can’t come soon enough.
So for breakfast this morning I made Mickey banana pancakes, fruit salad, and a smoothie. The pancakes were simple, whip up your regular pancake mix and drop in a chopped ripe banana. For the super cute shapes, you can just pour and make regular round pancakes then use a cookie cutter. The fruit salad was just a mix of what we currently had in our fridge: watermelon, strawberries and green grapes. I always cut the grape into quarters just because they can be a choking hazard. And lastly, todays smoothie was a banana + vanilla yogurt cup from Trader Joes, with about 3/4 cup of organic whole milk and a tablespoon of almond butter. Emma ate and drank it all up! Meals like this make me feel good, the fact that she enjoyed every bit of it makes me feel a bit accomplished. That is, until the next meal where I wont know if she’ll love it or hate it. We shall see.
